I know this picture is of chicken skewers but the recipe is only for the satay sauce. We developed this recipe to go on our menu as a vegan option, with stir fried vegies and rice noodles. It makes a lot of sauce so be prepared to be eating satay sauce for a few meals!
Ingredients
- 2 Tblsp olive oil
- 1 onion, minced
- 3 cloves garlic, minced
- 1 cup peanut butter, smooth or crunchy (I prefer crunchy)
- 4 Tblsp soy sauce
- 1/3 cup sweet chilli sauce
- 2 Tblsp brown sugar
- 1 cup coconut milk

In a saucepan or fry pan sauté onion and garlic but do not brown. Add remaining ingredients and stir well. Reduce heat and simmer for 10 minutes, stirring occasionally.
