I was really impressed with this dish. The apple cider vinegar lifted it out of the ordinary and gave it an almost pickled flavour. A bit crunchy and simply delicious!
Ingredients
- ¼ small cabbage, shredded
- 2 rashers bacon
- 1 small onion, diced
- 2 Tblsp butter
- Dash of apple cider vinegar
- Salt and pepper to taste

Remove bacon rinds before dicing, then cook in a frypan on medium heat until fat has rendered.
Add in 1 tablespoon of butter and the chopped onion and sauté until onion is translucent.
Turn the heat to low and add in the cabbage. Cook until cabbage is wilted but still retains some crunch, stirring occasionally.
Turn off the heat and add in the remaining tablespoon of butter and the dash of apple cider vinegar, then season to taste.
