Porcupines

Have you heard of Porcupines? I hadn’t until a friend cooked them for me. I never asked for his recipe but when I stumbled across this one I knew I had to try and make them. Looking at the ingredients I thought they might end up a bit bland but I was surprised at the depth of flavour. I always serve them with mashed potato and crusty bread. Delicious!

Ingredients

  • 500 grams beef mince
  • ½ cup uncooked rice
  • 1 small onion, finely diced
  • ½ teaspoon celery salt
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 450 ml passata
  • 1 cup water
  • 2 Tblsp Worcestershire sauce
  • Few splashes olive oil

Heat oven to 200 degrees celcius.
Mix meat, rice, onion, salts, garlic powder and pepper.
Shape mixture by rounded tablespoonfuls into balls.
Heat oil in a large frypan and brown off meatballs on all sides then place in an ungreased baking or casserole dish.
Stir together remaining ingredients and pour over meatballs then cover and bake for 1 hour.
