Scallopini is a simple and classic dish. This recipe uses pork instead of veal so if you choose to use veal slightly reduce the cooking time. The pork came out very tender and the sauce was full of flavour without being heavy.
Ingredients
- 500 grams pork tenderloin, sliced thinly
- ½ cup plain flour
- 2 Tblsp butter
- 2 Tblsp oil
- ½ cup chicken stock
- ½ cup water or white wine
- 1 onion, finely diced
- 1 clove garlic, minced
- ¼ Tsp black pepper
- ¼ Tsp each thyme, rosemary, oregano
- 200 grams mushrooms, sliced
- ½ cup cream

Dredge the pork in flour. Heat the butter and oil in a frypan then add the pork and brown. Stir in stock, water, onion, garlic, pepper and herbs and bring to the boil. Add mushrooms, reduce heat and simmer for 15 minutes. Add cream and stir through until reheated, but do not boil.
Serve immediately.
